But after installing (WITHOUT archinstall) and using arch and saying it… what now? NixOS aint cutting it and immutable distros are…well…too immutable.)

You could always fall back to Hannah Montana Linux.
GUIX, openSUSE or Void might take your fancy if the more mainstream distros aren’t quite hitting the spot.
